Photos: Just Baked Desserts - Getting Their Own Spotlight on Spring Street Soon

Just Baked started off in Spring Street Cafe and is moving to its own location on Spring Street in the coming weeks.


The is entering its 10th year of service, said owner Beth McNichols.

And since November 2011, her second business, Just Baked, her co-owned baked goods company, has been selling out of a case at the Cafe.

"That was to see how it goes," said McNichols, of Roslindale.

She said she started Just Baked with Frances Kolenik for a simple reason: "Because I love to bake, and I just wanted to do something special."

She added, "We make everything from scratch. We use some organic stuff. I like to experiment. Most of the recipes we have are from our mothers and our aunts and friends. So some things we’ve kept the same and some we’ve changed. My mother’s date squres, she used regular flour and oatmeal, and we do a variation for vegans, and added walnuts, flax seed and change out the flour and oatmeal. I cut the sugar in half so they would be healthier. Don't get me wrong, they still have butter."

The Just Baked menu changes constantly from lemon squares, cream cheese brownies, cupcakes to pies. McNichols said she tries to take advantage of what's in season, like pumpkins in fall. 

And in the coming weeks, Just Baked will have its own storefront at 168 Spring Street, at the .

McNichols said there will be just baked desserts, as well as just made soups, salads and sandwiches.
